Tender Keto Meatballs with Dipping Sauces

Meatballs with dipping sauces are a great party food, but they can have hidden carbs with the addition of bread or cracker crumbs. Making it without them can lead to tough little meatballs instead of tender ones. 

Which led me to thinking about making meatballs, one day, as I was making Alison Bread. Why not use it to make some meatballs? Turns out it was a great idea. Tender meatballs with a lot of flavor.

I’ve included 3 dipping sauces to get you started, but just about any sauce you like will do. They pretty versatile little balls of meat. (As it turns out, they also work great used the next day in meatball soup.)

Ingredients
  1. 2 T Coconut flour
  2. 1 Egg
  3. 1 T Water
  4. 1 T Mayonnaise
  5. 1/2 t Baking Powder
  6. 1 pound Ground Beef 80/20
  7. 2/3 cup shredded mexican cheese blend
  8. 1 t kosher salt
  9. 1/2 t granulated garlic
  10. 1/4 t cayenne pepper
  11. 1 T 2% Milk
  12. 1 T Worcestershire Sauce
  13. 1 Egg
Instructions
  1. Preheat oven to 350f.
  2. Make Alison bread: Combine coconut flour and baking powder in a bowl. In another bowl, combine 1 egg, water and 1 tablespoon of mayo.
  3. Mix the two bowls together.
  4. Add mixture to a small, microwave safe bowl or dish and zap it for 60 - 90 seconds.
  5. When done, turn out and let cool. Rip or cut into small pieces.
  6. Combine crumbs with remaining ingredients and mix until well combined.
  7. Using a small ice cream scoop, portion 24 meatballs. Roll and put on cookie sheet with non stick foil, or sprayed with non-stick spray.
  8. Bake for 20 minutes or until cooked through.
  9. Serve with dipping sauce(s).
